Oh there isn’t anything about this that I don’t like. DH and I needed something to eat for dinner that wouldn’t be a lot of points for Weight Watchers. And I happened to have an acorn squash in the fridge. This was absolutely amazing and wonderful. AND SIMPLE!

You’ll need: 1 acorn squash.

Cut in half, scoop out seeds, stick in baking dish with a cup of water, bake at 350 degrees until tender (about 40 minutes for this big one).

Sprinkle with salt and pepper, crumble feta over top, put a dollop of butter in the middle, and then sprinkle with paprika.
